Velvety baked butternut squash with a hint of cinnamon.
Ingredients:
  • 1 (16 ounce) package frozen butternut squash, cubed
  • 0.5 cup margarine
  • 0.5 cup non-dairy creamer
  • ground cinnamon, for dusting
Instructions:
  • In a large pot, add butternut squash and cover it with salted water. Boil on high heat, then simmer covered on medium-low until tender, about 5 minutes. Drain and let it steam dry for a minute or two before using.
  • Preheat the oven to 350°F (175°C).
  • Combine margarine with butternut squash in a large bowl. Mix flour, eggs, sugar, and non-dairy creamer in another bowl. Fold flour mixture into the squash. Transfer to a 9x13 inch baking pan and sprinkle with cinnamon.
  • Bake in the oven until beautifully golden for 1 hour.
