Irresistible Butterscotch Apple Cookies.
Ingredients:
  • 2.5 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1.2999999523163 cups packed brown sugar
  • 10 tablespoons butter, softened
  • 0.66699999570847 cup apple juice
  • 2 cups butterscotch chips
  • 0.75 cup grated apple
  • 0.75 cup chopped walnuts
  • 2 tablespoons butter
  • 1 cup confectioners' sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease the cookie sheets.
  • Combine flour, cinnamon, baking soda, and salt in a medium bowl.
  • In a large mixer bowl, cream together brown sugar and 1/2 cup of butter until creamy. Add in the egg and beat well. Gradually mix in the flour mixture and apple juice alternately. Fold in 1 1/2 cups of butterscotch chips, diced apple, and 1/2 cup of walnuts. Using a slightly rounded tablespoon, drop the dough onto lightly greased cookie sheets.
  • Bake until golden brown, about 10-12 minutes. Allow to rest for 2 minutes, then cool on wire racks.
  • Prepare the luscious butterscotch glaze by gently melting the remaining butterscotch chips and 2 tablespoons of butter in a small, heavy saucepan over the lowest heat setting.
  • Once the butter and chips are melted, take the pan off the heat and mix in 1 cup confectioners' sugar and 1 1/2 tablespoon apple juice until the glaze is smooth. Then, spread the glaze on the cooled cookies and sprinkle with the rest of the walnuts.
