Indulgent butterscotch brownies with rich coffee frosting take it to the next level of sweetness.
Ingredients:
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, melted and cooled slightly
  • 2 cups packed light brown sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 cup chopped walnuts
  • 2 teaspoons instant coffee granules
  • 2 tablespoons water
  • 3 cups sifted confectioners' sugar
  • 0.5 cup unsalted butter, softened
Instructions:
  • Preheat the oven to 350 degrees F (180 degrees C) and generously grease a 7x11-inch baking pan.
  • Combine and sieve the flour, baking powder, and salt in a bowl.
  • Combine brown sugar and melted butter, beating until well combined. Mix in eggs and vanilla, then gradually add flour mixture. Gently fold in walnuts until evenly distributed. Spread batter in the prepared pan.
  • Bake in the oven until beautifully golden, about 30-35 minutes. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely, around 15-20 minutes.
  • Prepare the frosting by blending coffee with water in a small bowl.
  • Using an electric mixer, whip confectioner's sugar and butter in a mixing bowl until fluffy. Mix in coffee until well combined.
  • Frost the cooled bars evenly and allow the frosting to firm up before slicing into 36 squares.
