Tangy lime coleslaw with crispy cabbage, carrots, and jicama, perfect for a tasty lunch.
Ingredients:
  • 1 pound shredded cabbage
  • 1 jicama, peeled and shredded
  • 2 large carrots, peeled and shredded
  • 4 stalks green onions, white and light green parts only, thinly sliced
  • 1 medium jalapeno pepper, seeded and minced
  • 6 tablespoons light mayonnaise
  • 0.25 cup lime juice
  • 0.5 teaspoon kosher salt, or to taste
Instructions:
  • In a large bowl, toss together the cabbage, jicama, carrots, green onions, and jalapeno pepper.
  • In a small bowl, mix together mayonnaise, lime juice, and 1/2 teaspoon salt until well combined. Drizzle over veggies, toss to coat evenly. Adjust salt to taste. Chill covered for at least 30 minutes before serving.
