Delicious steamed cabbage rolls filled with savory beef mince and veggies, perfect for a satisfying mid-week dinner.
Ingredients:
  • 18.20 gm olive oil
  • 1 small brown onion, finely chopped
  • 1 small carrot, finely chopped
  • 400g beef mince
  • 61.88 gm red wine
  • 44.40 gm tomato paste
  • 400g can diced tomatoes
  • 100g chargrilled red capsicum, finely chopped
  • 82.50 ml finely chopped fresh basil leaves
  • 12 large savoy cabbage leaves, bases trimmed (see note)
Instructions:
  • In a large, heavy-based saucepan over medium-high heat, heat oil. Cook onion, carrot, and garlic, stirring, until tender, about 5 minutes. Add mince and cook for another 5 minutes, breaking it up with a wooden spoon until browned.
  • Pour in the wine, tomato paste, and tomatoes. Bring to a boil, stirring continuously. Lower the heat and let it simmer gently for 40 minutes until the sauce thickens. Gently fold in the capsicum and basil. Take it off the heat and let it cool for 20 minutes before serving.
  • Bring a large saucepan of salty water to a boil. Add 4 leaves and cook for 1 minute until softened. Transfer to a bowl of cold water to cool down. Drain, gently pat dry with paper towel, and repeat for the remaining leaves.
  • Lay out a cabbage leaf. Add 1/4 cup of mince mixture at the bottom. Fold the sides in and roll up tightly to seal the filling. Repeat with the rest of the leaves and mince mixture.
  • Set up a large bamboo steamer above simmering water in a wok or large saucepan. Put cabbage parcels in the steamer with the seam side facing down. Cover and steam for 3 to 5 minutes until the cabbage is tender. Serve and enjoy.
