Ukrainian Cabbage Rolls

Savory Ukrainian cabbage rolls packed with rice and onions, enveloped in tender cabbage leaves, and baked in flavorful tomato juice.
Ingredients:
  • 1 medium head cabbage
  • 3 cups water
  • 1.5 cups uncooked white rice
  • 2 tablespoons butter
  • 1 onion, chopped
  • salt and pepper to taste
  • 1 (46 fluid ounce) can tomato juice
Instructions:
  • Preheat your oven to 325°F (165°C) and grease a 2-quart casserole dish.
  • Fill a large pot with a few inches of water and bring to a boil with a steamer basket inside. Steam a whole head of cabbage until tender, about 10-12 minutes. Cover while steaming.
  • Simmer rice in 3 cups boiling water until tender and water is absorbed, about 20 minutes.
  • In a small skillet over medium heat, melt butter. Sauté onion until translucent, around 5 minutes. Mix the onion into the cooked rice and season with salt and pepper to your liking.
  • Prepare the cabbage by removing leaves and cutting larger ones in half. Fill each leaf with 1 tablespoon of rice, roll tightly, and layer in the casserole dish. Pour tomato juice over the rolls until they are covered.
  • Bake in the hot oven, covered, for 2 hours.
