Tender beet green rolls, a twist on Ukrainian cabbage rolls, no pre-cooking required.
Ingredients:
  • 0.5 cup fresh bread crumbs
  • 0.25 cup milk
  • 6 ounces ground beef
  • 6 ounces ground pork
  • 2 teaspoons salt
  • 1 teaspoon fresh ground black pepper
  • 34 large whole beet green leaves, stems removed
  • 2 cups chicken broth
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • 1 tablespoon chopped fresh dill
Instructions:
  • Preheat the oven to 325°F (165°C) and lightly grease a 9x13-inch baking dish.
  • In a skillet over medium-high heat, melt the butter until sizzling. Add the onion and sauté until soft, around 5 minutes. Set aside to cool.
  • Allow the onion to cool. In a large bowl, combine bread crumbs with milk and let it sit until absorbed, approximately 5 minutes. Mix in the cooked onion, ground beef, ground pork, egg, salt, and pepper until thoroughly combined.
  • Prepare the baking dish with two large beet leaves at the bottom and save two more for the top. Place the remaining beet leaves on a flat surface and spoon a generous teaspoon of the meat mixture onto each leaf's wide end. Roll up each leaf around the filling and arrange them in the baking dish. Pour chicken broth over the rolls and cover with the remaining two reserved leaves.
  • Roast in the preheated oven until the beet leaves are tender and the filling is fully cooked, approximately for 1 hour or until an instant-read thermometer inserted into the center registers at least 160 degrees F (72 degrees C).
  • Take the dish out of the oven. Pour the liquid from the bottom of the baking dish into a small saucepan. Combine flour and cream in a bowl until smooth, then gradually stir the mixture into the pan juices. Gently bring to a low simmer over medium heat and cook until thickened, around 5 minutes. Be careful not to boil.
  • Arrange the filled rolls in a beautiful serving dish, generously drizzle with the flavorful sauce, and garnish with a sprinkle of fragrant chopped dill.
