Cabbage salad with crisp chicken

Whip up a quick Asian-inspired meal in just 30 minutes for a delicious family dinner at home!
Ingredients:
  • 425g savoy cabbage
  • 3cm piece ginger, peeled and julienned
  • 1 large clove garlic
  • 2 star anise
  • 2 red bird's eye chillies
  • 3 chicken breasts
  • 3 egg whites
  • 2 tsp sesame oil
  • 21.00 gm soy sauce, plus 1 tsp extra
  • 130.00 gm cornflour
  • 36.40 gm peanut oil or vegetable oil, plus extra, to shallow-fry
  • 20.00 gm caster sugar
  • 24.00 gm sesame seeds
  • 62.50 ml Chinese black vinegar or rice wine vinegar
  • Chilli sauce, to serve
Instructions:
  • Prepare the cabbage by removing its core and thinly shredding it. Soak the shredded cabbage in a bowl of iced salted water. In a separate bowl, combine ginger, sliced garlic, broken star anise, and halved chilies.
  • To flatten the chicken to 3mm thickness, sandwich all pieces between plastic wrap and gently pound with a meat mallet or rolling pin.
  • Prepare a tray lined with baking paper. Combine egg whites, sesame oil, and 1 tablespoon soy sauce in a bowl. In another bowl, mix cornflour with freshly ground black pepper and 1 teaspoon salt. Coat the chicken with cornflour, dip it in the egg white mixture, and coat it with cornflour again before placing it on the tray.
  • After draining the cabbage, place it back in the bowl. In a large frying pan, warm oil over low heat. Add the ginger mixture and cook for 1 minute until lightly golden. Next, mix in the sugar and sesame seeds, stirring for another minute until golden. Pour in the vinegar and 1 teaspoon of soy sauce, simmer, and then drizzle this flavorful sauce over the cabbage. Toss everything together until well combined.
  • Wipe the pan clean, add 2cm of oil, and heat over medium heat. Fry the chicken in 2 batches for 1 1/2 minutes on each side, or until golden and fully cooked. Drain on a paper towel.
  • Distribute the salad into bowls, layer with chicken, and accompany with chili sauce for serving.
