Italian chicken cacciatore: A savory blend of chicken, tomatoes, and mushrooms.
Ingredients:
  • 3 boneless skinless chicken breast halves (3/4 to 1 lb)
  • 1 tablespoon olive or vegetable oil
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1/2 cup chopped green bell pepper
  • 3/4 cup sliced zucchini or yellow summer squash
  • 3/4 cup sliced mushrooms
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1/2 teaspoon Italian seasoning
  • 1/8 teaspoon pepper
  • 2 cups uncooked farfalle (bow-tie), radiatore (nugget) or rotini pasta
Instructions:
  • Cut each chicken breast half into 3 pieces. Heat oil in a 10-inch skillet over medium-high heat. Cook chicken for about 5 minutes, stirring frequently, until browned; then move chicken to one side of the skillet.
  • Incorporate onion, garlic, bell pepper, zucchini, and mushrooms into the skillet. Sauté the vegetables for approximately 3 minutes, stirring occasionally, until they are tender-crisp.
  • Combine the tomatoes, Italian seasoning, and pepper with the vegetables and chicken. Bring to a boil, then lower the heat, cover, and simmer for 25 minutes. While simmering, cook the pasta according to package instructions and drain.
  • Continue to cook the chicken mixture uncovered for an additional 5 minutes. Serve the mixture over pasta.
