Indulgent muffins with a delightful surprise center of Cadbury Cherry Ripe bars.
Ingredients:
  • 3 x 52g bars Cherry Ripe
  • 125g butter, chopped
  • 100g Dark Chocolate Melts
  • 4 eggs, lightly beaten
  • 70.95 gm caster sugar
  • 8.80 gm vanilla extract
  • 187.50 ml flour
  • 5.00 gm baking powder
Instructions:
  • Dice each of the 2 Cherry Ripe Bars into 6 equally sized squares. Finely chop the last remaining bar and keep it aside.
  • In a saucepan, melt the butter and chocolate together over low heat, stirring occasionally until smooth. Allow to cool slightly before using.
  • Combine eggs, sugar, and vanilla, then fold in sifted flour and baking powder until just mixed. Fill 12 paper lined muffin pans two-thirds full with batter. Place a square of Cherry Ripe on top of each muffin, then cover with remaining batter. Sprinkle chopped Cherry Ripe on top.
  • Bake at 180C in a moderate oven for 20-25 minutes or until thoroughly cooked. Allow to cool on a wire rack for 10 minutes before removing from pan to cool completely.
  • Keep in a sealed container until ready to use.
