Cajun-spiced baked chicken strips with a crispy breadcrumb coating.
Ingredients:
  • nonstick cooking spray
  • 0.5 cup panko bread crumbs
  • 0.25 cup plain bread crumbs
  • 2 tablespoons Cajun seasoning
  • 1.5 pounds chicken breast tenderloins
  • 0.25 cup all-purpose flour
Instructions:
  • Preheat your oven to 350°F (175°C) and generously spray an 8x11-inch baking pan with cooking spray.
  • Combine panko and plain bread crumbs in a shallow bowl, then mix in Creole seasoning and pepper until well combined. In a separate bowl, beat the eggs.
  • Coat the tenderloins in flour, then dip in the egg mixture, and generously coat with breadcrumbs before placing them in the greased pan.
  • - Bake the chicken in the preheated oven for around 20 minutes or until golden brown and no longer pink in the centers, remembering to turn the pieces halfway through. Check with an instant-read thermometer, and ensure the internal temperature reaches at least 165°F (74°C).
