Cajun-spiced chicken breast stuffed with creamy spinach and cottage cheese filling, baked in butter. Enjoy with a side salad, if desired.
Ingredients:
  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 0.5 yellow onion, chopped
  • 1 cup cottage cheese
  • 4 skinless, boneless chicken breast halves
  • 2 tablespoons Cajun-style seasoning
  • 2 tablespoons melted butter
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Press out any extra liquid from the thawed spinach. Combine the spinach with onion and cottage cheese in a large bowl, and set it aside.
  • Season chicken breasts generously with flavorful Cajun-style seasoning. Stuff each breast with a quarter of the exquisite cheese and spinach mixture, then elegantly fold them in half. Secure with toothpicks and nestle them into a lightly greased 9x13 inch baking dish.
  • Drizzle melted butter over chicken and bake at 350°F (175°C) for approximately 25 minutes, or until chicken is fully cooked and juices are clear.
