Spinach & cottage cheese dip with crudites

Ingredients:
  • 1 bunch English spinach, stalks removed, washed
  • 82.50 ml fresh mint leaves
  • 130g cottage cheese
  • 10.60 gm fresh lemon juice
  • 1 tsp garlic
  • Salt & freshly ground pepper
  • 1 bunch Dutch carrots, trimmed, peeled
  • 1 bunch small radish, trimmed, halved
  • 200g green beans, trimmed
  • 125g baby corn
Instructions:
  • Chop the spinach and mint, then blend them in a food processor with cottage cheese, lemon juice, and garlic until smooth. Transfer to a bowl, season with salt and pepper, and serve with crudites.
