Indulge in a luscious pineapple cake drizzled with gooey caramel-pecan sauce.
Ingredients:
  • 1.5 cups white sugar
  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
  • 1 (20 ounce) can crushed pineapple with juice
  • 0.75 cup white sugar
  • 0.75 cup evaporated milk
  • 0.5 cup margarine
  • 1 cup chopped pecans
  • 1.5 cups flaked coconut
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 9x13-inch pan by greasing and flouring it.
  • Combine flour, sugar, baking soda, and salt in a large bowl. Stir in pineapple with juice and eggs. Mix on low speed until fully combined, then pour into the pan.
  • Bake in the preheated oven for 30-35 minutes, or until a tester comes out clean.
  • Prepare the topping: In a saucepan, mix sugar, milk, and margarine. Bring to a boil, whisking constantly, and simmer for 2 minutes. Stir in pecans and coconut until well blended. Take off the heat.
  • After removing the cake from the oven, quickly drizzle the topping over the warm cake and spread it evenly to coat the entire surface.
