Cajun fish fillets

Try zesty Cajun Fish Fillets for a taste of summer!
Ingredients:
  • 4 x 150 gram pink ling fish fillets
  • 5.00 gm cajun seasoning (hot)
  • Spray olive oil
  • 200 gram Pernino tomatoes
  • 1 cos lettuce, inner leaves torn
  • 20.00 ml pine nuts
  • 87.45 gm mango chilli dressing
  • Lemon cheeks, to serve
Instructions:
  • Season one side of the fish with a light sprinkle of seasoning, followed by a gentle spray of oil. Heat a large non-stick frying pan over medium-high heat. Place the fish in the pan, seasoned side down, and cook for approximately 2 1/2 minutes. Season the top side of the fish with spice and spray with oil. Flip the fish and cook for another 2 1/2 minutes, or until the flesh flakes easily with a fork. Remove from the pan and set aside on a plate.
  • Place tomatoes in pan and sauté for 2 minutes, until slightly softened. Arrange lettuce on plates, top with fish and sautéed tomatoes. Sprinkle with pine nuts, drizzle with dressing, and serve with lemon cheeks and extra dressing on the side.
