Quick and flavorful Cajun-style fried fish for a speedy dinner.
Ingredients:
  • 8 (about 70g each) kipfler potatoes
  • 10.00 gm Cajun seasoning (Herbs & Spices brand)
  • 20.00 ml plain flour
  • 4 (about 125g each) white fish fillets (like snapper)
  • 36.40 gm olive oil
  • 20g (1 tbsp) butter
  • 1 bunch rocket, ends trimmed, washed, dried
  • Salt & ground black pepper, to taste
  • Lemon wedges, to serve
Instructions:
  • In a large saucepan, gently place the potatoes and cover them with cold water. Bring to a gentle boil over medium-high heat. Reduce the heat to medium and let the potatoes cook, partially covered, for 12-15 minutes until tender. Drain, halve, and keep warm.
  • Combine the Cajun seasoning and flour for a flavorful mix. Dredge the fish fillets in the seasoned flour, shaking off any excess.
  • In a large frying pan over medium-high heat, heat 2 teaspoons of olive oil along with half of the butter. Cook 2 fish fillets for 3 minutes on each side until they flake easily with a fork. Keep warm after removing from the pan. Repeat the process with the remaining 2 teaspoons of oil, the rest of the butter, and the remaining fish.
  • Plate the fish. In a bowl, mix rocket and remaining olive oil, then season with salt and pepper. Mix well.
  • Arrange the rocket on the plates, then place the warm potatoes on top. Serve with lemon wedges.
