Quick cajun fish tacos recipe

Spice up quick fish tacos with a Cajun twist in just 10 minutes!
Ingredients:
  • 600g Australian barramundi fillets
  • 10.00 gm Cajun seasoning
  • 18.20 gm olive oil
  • 350g packet kale slaw mix
  • 2 pickled jalapeño chillies
  • 220g pkt pre-chopped fresh pineapple
  • 2 limes
  • 8 mini flour tortillas
  • Fresh coriander sprigs, to serve
Instructions:
  • Preheat a large deep frying pan over medium-high heat.
  • As the pan heats, peel the fish skin off and dice the flesh into 2-3cm pieces. Place in a bowl and mix with Cajun seasoning and oil until fully coated.
  • Cook half of the fish in the pan, turning gently, for 2-3 minutes, or until just cooked through. Transfer to a bowl, then cook the remaining fish following the same process.
  • Prepare the kale slaw in a large bowl as directed on the packet. Set aside. Slice the jalapeño and place it in a small bowl with the pineapple. Squeeze one half of the limes over the pineapple mixture and mix well.
  • Microwave the flour tortillas for a quick warm-up. Distribute the slaw evenly among them. Add the fish and pineapple salsa on top. Finish with a sprinkle of fresh coriander and serve with the extra lime halves.
