Indulgent Cajun shrimp, savory andouille sausage, and colorful trinity veggies atop crispy tortilla chips, covered in gooey melted cheese for unforgettable Cajun nachos.
Ingredients:
  • 0.5 pound andouille sausage, sliced
  • 1 small yellow onion, diced
  • 0.5 red bell pepper, diced
  • 0.5 green bell pepper, diced
  • 1 celery rib, diced
  • 1 (12 ounce) bag tortilla chips
  • 12 ounces raw peeled and deveined shrimp
  • 2 teaspoons seafood seasoning (such as Old Bay®)
  • 1 (8 ounce) package shredded Colby Jack cheese
Instructions:
  • 1. Preheat a skillet over medium-high heat. Cook andouille for 2 minutes, then add onion and cook for another 2 minutes. Add bell peppers and cook for an additional 2 minutes. Remove from heat and stir in celery.
  • Spread a layer of foil on a baking sheet and then arrange the tortilla chips on top. Spoon the sausage mixture generously over the chips.
  • In a bowl, combine shrimp with oil and seafood seasoning, ensuring they are evenly coated. Cook the seasoned shrimp in a skillet over medium-high heat for 3 minutes. Spread the cooked shrimp on top of the sausage mixture and sprinkle with Colby Jack cheese to finish off your nachos.
  • Position the oven rack 6 inches from the heat source and preheat the broiler on low. Broil nachos until cheese is melted, approximately 3 minutes.
