Try this quick and flavorful cajun pork and pineapple stir-fry for a delicious weeknight meal!
Ingredients:
  • 3 limes
  • 400g Pork Sizzle Steaks*, thickly sliced
  • 10.00 gm Cajun seasoning
  • 1/2 pineapple, peeled, cored, cut into 2cm pieces
  • 400g pkt Family Stir Fry
Instructions:
  • Prepare the zest and juice from one lime. Cut the rest of the limes into wedges or cheeks.
  • Heat a wok or large frying pan with olive oil spray over high heat. Add the pork and stir-fry until browned, about 2-3 minutes. Mix in Cajun seasoning and stir-fry for another minute until fragrant. Transfer the pork mixture to a plate.
  • Spray the wok or pan generously with olive oil spray and heat over medium-high heat. Stir-fry the pineapple for 2-3 minutes until lightly browned. Add the vegetables and stir-fry for another 2-3 minutes until tender. Finally, return the pork mixture to the wok or pan, add lime juice and 2 tablespoons of water, and stir-fry for 1-2 minutes until the pork is heated through.
  • Portion the mixture into individual serving bowls. Garnish with freshly grated lime zest and serve alongside lime wedges or cheeks.
