California-Style Turkey Patties with Corn and Tomato Relish

Tasty broiled turkey patties with corn and tomato relish, made easy with Progresso® chicken broth. Ready in just 25 minutes for a delightful dinner.
Ingredients:
  • 1 can (11 oz) whole kernel corn with red and green peppers, drained
  • 2 medium stalks celery, sliced (1 cup)
  • 12 cherry tomatoes, cut into fourths
  • 2 tablespoons lemon juice
  • 1 1/2 lb ground turkey breast
  • 1 medium onion, chopped (1/2 cup)
  • 1 cup soft bread crumbs (about 1 1/2 slices bread)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup Progresso™ chicken broth (from 32-oz carton)
Instructions:
  • Combine all relish ingredients in a medium bowl; set aside.
  • Combine all the remaining ingredients in a large bowl and form the mixture into 6 patties, each approximately 1/2 inch thick.
  • Preheat the oven on the broil setting. Grease the broiler pan rack with cooking spray and place the patties on the rack. Broil the patties with the tops 4 inches from the heat for about 12 minutes, turning them once, until they are no longer pink in the center. Serve the patties with relish.
