California-style shrimp and crab Louie: succulent seafood on crisp greens with creamy Thousand Island dressing. Ideal for a light and satisfying meal.
Ingredients:
  • 4 large eggs
  • 1 head iceberg lettuce, shredded
  • 8 cherry tomatoes, halved
  • 1 avocado - peeled, pitted and sliced
  • 0.25 cucumber, thinly sliced
  • 0.5 pound crabmeat
  • 8 ounces cooked shrimp
  • 0.66666668653488 cup mayonnaise
  • 0.33333334326744 cup hot chile sauce
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon chopped fresh parsley
  • 1 lemon - cut into wedges, for garnish
Instructions:
  • In a saucepan, submerge the eggs in cold water. Bring the water to a boil, then cover the pan, turn off the heat, and allow the eggs to sit in the hot water for 10 to 12 minutes. Take the eggs out of the hot water, let them cool, peel, and chop them.
  • Distribute lettuce, tomatoes, avocado, cucumbers, and eggs evenly among 4 plates. Finish by adding crab and shrimp on top.
  • Whisk together mayonnaise, chili sauce, relish, salt, and pepper to make the dressing. Drizzle the dressing over the salad and top with parsley and lemon for a finishing touch.
