Refreshing cold shrimp salad with hard-cooked eggs, imitation crab, corn, peas, green onions, and dill.
Ingredients:
  • 0.5 pound cooked shrimp (tails removed), cut in bite-sized pieces
  • 1 (8 ounce) package flake-style imitation crabmeat, chopped into bite-sized pieces
  • 3 hard-boiled eggs, chopped
  • 0.25 cup green peas
  • 0.25 cup white corn kernels
  • 2 green onions, sliced
  • 1 tablespoon chopped fresh dill
  • 0.25 cup sour cream
  • 0.25 cup mayonnaise
  • 6 cooked shrimp, tails on
Instructions:
  • In a large bowl, mix together 1/2 pound of shrimp, crabmeat, eggs, peas, corn, green onions, and dill.
  • Combine sour cream and mayonnaise in a separate bowl, then stir into the shrimp mixture. Season with salt and pepper, and top with tail-on shrimp as a garnish.
