Elevate Italian night with flaky chicken calzones baked to perfection.
Ingredients:
  • 1 can refrigerated pizza crust dough
  • 2 cups shredded mozzarella cheese (8 ounces)
  • 1 cup cooked chicken, cut into thin strips
  • 1/2 cup ricotta cheese
  • 1/4 cup chopped fresh basil leaves
  • 2 roma (plum) tomatoes, chopped
  • Freshly ground pepper
  • 1 large egg, slightly beaten
Instructions:
  • Preheat oven to 375°F and grease 2 cookie sheets.
  • Divide the dough into 6 equal parts, then roll each part into a 7-inch circle on a lightly floured surface using a floured rolling pin.
  • Layer each dough circle with a generous topping of mozzarella cheese, chicken, ricotta cheese, fresh basil, and tomatoes, leaving a 1-inch border. Sprinkle with pepper. Gently fold the dough over the filling, pressing the edges with a fork to seal tightly.
  • Arrange the calzones on baking sheets. Brush them with a generous coating of egg wash. Bake for approximately 25 minutes until they achieve a beautiful golden brown color.
