Savory Italian garlic beef mixture on crispy bread - ready in 20 minutes!
Ingredients:
  • 8 diagonally cut slices French bread, 1/2 inch thick
  • Cooking spray
  • 2 tablespoons grated Parmesan cheese
  • 1 lb lean (at least 80%) ground beef
  • 1 small green bell pepper, sliced
  • 1 or 2 cloves garlic, finely chopped
  • 1 can (14.5 oz) diced tomatoes with Italian-style herbs (or other variety), undrained
  • 1 can (8 oz) pizza sauce
  • 1 jar (4.5 oz) sliced mushrooms, drained
Instructions:
  • Preheat the broiler. Arrange bread slices on a baking sheet. Coat bread with cooking spray and sprinkle cheese on top. Broil 4 to 6 inches from heat for 1 to 2 minutes until lightly browned. Remove from oven and set aside.
  • In a large skillet over medium-high heat, cook the beef, bell pepper, and garlic for 5 to 7 minutes until the beef is browned. Drain any excess fat. Add tomatoes, pizza sauce, and mushrooms, then cook for an additional 1 to 2 minutes until heated through.
  • On each of 4 serving plates, elegantly layer 2 golden toasted bread slices with a generous portion of flavorful beef mixture.
