Cheesy puff pastry cups filled with fruity topping and crunchy pecans.
Ingredients:
  • 1 sheet frozen puff pastry (from 17.3-oz package), thawed
  • 1/4 cup dried cherries, finely chopped
  • 3 tablespoons cherry preserves
  • 4 oz Camembert cheese (do not remove rind), cut into 1/4x1/4-inch pieces
  • 2 tablespoons finely chopped pecans or hazelnuts
Instructions:
  • Preheat the oven to 400°F. Grease 36 mini muffin cups with cooking spray. Roll out the pastry sheet on a lightly floured surface and cut it into 36 (1 1/2-inch) squares. Gently press one square into the center of each muffin cup, ensuring it reaches the bottom. Bake for 10 minutes.
  • In a small bowl, combine cherries and cherry preserves until fully mixed; set aside.
  • Use the handle of a wooden spoon to create a well in the center of each pastry cup. Bake for an additional 6 to 8 minutes until they turn a beautiful golden brown color.
  • Press the pastry cups in the center once more. Fill each cup with a generous teaspoon of cheese, top with a quarter teaspoon of cherry mixture, and sprinkle evenly with pecans.
  • Bake for 2-4 minutes until the cheese is perfectly melted. Gently remove from muffin cups and transfer to a serving platter. Enjoy while warm.
