"Cheesy cherry tomato campanelle pasta - a quick, easy, and perfect weeknight meal."
Ingredients:
  • 1 pound campanelle pasta
  • 0.25 cup olive oil
  • 2 cloves garlic, smashed
  • 4 cups cherry tomatoes, halved
  • 1.5 teaspoons kosher salt
  • 1 cup grated Parmesan cheese
  • 1 cup freshly grated pecorino cheese
  • 1 cup chopped fresh basil
Instructions:
  • 1. Boil generously salted water in a large pot. Submerge pasta and cook for 5 minutes less than instructed on the package. Drain thoroughly, saving 1/2 cup of the pasta water.
  • Heat a large skillet over medium-high heat. Cook oil and garlic until fragrant and starting to brown, for about 1 minute. Add tomatoes and kosher salt. Cook and stir until tomatoes start to break down and release juices, around 3 minutes.
  • Combine cooked pasta with Parmesan cheese, then add pecorino cheese and basil. Toss until well combined, adding reserved pasta water to adjust sauce consistency if necessary.
