Quick and easy side dish with a sweet and buttery twist that's almost as good as dessert! Must-try in 15 minutes or less.
Ingredients:
  • 1 acorn squash, halved and seeded
  • 0.25 cup butter, divided
  • 0.25 cup packed brown sugar, divided
Instructions:
  • On a microwave-safe plate, lay the squash halves cut side up. Fill each cavity with a tablespoon of butter and a tablespoon of brown sugar.
  • Microwave squash on full power for 8 to 10 minutes, rotating occasionally for even cooking. Once soft, scoop out flesh and combine with sugar and butter in a bowl. Mash lightly to blend ingredients. Serve in a bowl or in the squash shells.
