Bourbon-spiked fruity cookies with a festive twist of candied fruit, reminiscent of classic Christmas fruitcake.
Ingredients:
  • 2 eggs
  • 0.5 cup butter, softened
  • 1 cup brown sugar
  • 2 tablespoons orange juice
  • 1 tablespoon bourbon
  • 1 teaspoon baking soda
  • 1 tablespoon milk
  • 2 cups all-purpose flour
  • 3 cups candied cherries
  • 3 cups dates, pitted and chopped
  • 4 cups chopped pecans
Instructions:
  • Preheat your oven to a toasty 350 degrees F and give your cookie sheets a nice greasing.
  • In a large mixing bowl, combine eggs, butter, and brown sugar until creamy. Dissolve baking soda in milk and mix into the bowl. Stir in orange juice and bourbon. In a separate small bowl, gently coat candied fruits with a bit of flour to separate them easily. Add the floured fruits to the mixture along with flour, dates, and pecans. Blend everything well together. Spoon teaspoons of the mixture 2 inches apart on a cookie sheet.
  • Bake in the preheated oven for 8 to 10 minutes. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
