Loaded Christmas cookies with oats, butterscotch chips, coconut, and candied fruit.
Ingredients:
  • 1 cup white sugar
  • 1 cup margarine
  • 1 cup vegetable oil
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon butter-flavored extract
  • 3.5 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 1 cup chocolate chips
  • 1 cup butterscotch chips
  • 1 cup crispy rice cereal (such as Rice Krispies®)
  • 0.5 cup candied fruit, cut into small pieces
  • 0.5 cup shredded coconut
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly heated cooking environment.
  • In a large bowl, blend brown sugar, white sugar, margarine, and oil until creamy using an electric mixer. Mix in egg, salt, baking soda, cream of tartar, vanilla extract, and butter flavor thoroughly. Add flour and combine. Fold in oats, chocolate chips, butterscotch chips, rice cereal, candied fruit, and coconut; dough will be thick and chunky.
  • Use spoons or a small ice cream scoop to elegantly place dollops of cookie dough onto prepared baking sheets.
  • Bake until edges are set and lightly golden in a preheated oven for 8 to 12 minutes. Then, transfer to wire racks to cool.
