Whip up a flavorful and comforting soup with whatever ingredients you have on hand using this simple method.
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup sliced carrot
  • 0.5 cup sliced celery
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 (15 ounce) can red kidney beans, rinsed and drained
  • 1 (16 ounce) can diced tomatoes, undrained
  • 4 ounces elbow macaroni
  • 1 (8 ounce) can tomato sauce
  • 1.5 cups drained canned peas
  • 2 tablespoons red wine vinegar
  • 0.25 teaspoon ground black pepper
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • In a Dutch oven, heat oil over medium-high heat. Add onion, carrot, and celery; sauté until vegetables start to soften, around 5 minutes. Stir in garlic and cook for an additional minute, stirring frequently.
  • Combine the broth, beans, tomatoes, pasta, and tomato sauce in a pot. Bring to a boil, then simmer covered until the pasta is tender, around 20 minutes. Stir in peas and vinegar, then cook uncovered until peas are heated through, for about 2 to 3 minutes. Finally, season with salt and pepper and serve the soup topped with cheese.
