Decadent candied sweet potatoes with brown sugar, marshmallows, and a crispy toasted marshmallow topping. Perfect for the holidays!
Ingredients:
  • 4 pounds sweet potatoes, quartered
  • 3 cups miniature marshmallows, divided
  • 1.25 cups margarine
  • 1.25 cups brown sugar
  • ground cinnamon to taste
  • ground nutmeg to taste
Instructions:
  • Preheat the oven to 400°F (200°C) and generously grease a 9x13-inch baking dish.
  • 1. Bring a generous pot of water to a rolling boil. Add the potatoes and cook until just tender, around 15 minutes; drain and peel once they are cool to the touch.
  • Once the potatoes have cooled down, melt 2 cups of marshmallows along with butter, brown sugar, cinnamon, and nutmeg in a large saucepan over medium heat. Stir occasionally until the marshmallows are completely melted.
  • Combine the potatoes with the luscious marshmallow sauce, crushing some potatoes and leaving others in delectable chunks. Gently place the mixture into the baking dish.
  • Bake in the preheated oven for 15 minutes, then sprinkle 1 cup of marshmallows evenly over the top. Continue baking until marshmallows are slightly toasted and golden brown, about 5 more minutes.
