Candy-coated sweet potatoes with brown sugar, condensed milk, and marshmallows - a festive must-have for the holidays!
Ingredients:
  • 5 large sweet potatoes, peeled and cubed
  • 0.5 (14 ounce) can sweetened condensed milk
  • 0.5 cup salted butter, cut into small pieces
  • 2 tablespoons ground cinnamon
  • 0.33333334326744 cup brown sugar
  • 1.5 cups miniature marshmallows
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In a large pot, simmer sweet potatoes in salted water until tender, about 15 minutes. Drain.
  • In a medium mixing bowl, mash half of the sweet potatoes. Combine with condensed milk, butter, and cinnamon. Gently fold in the remaining sweet potato cubes and most of the brown sugar, being careful not to dissolve the sugar. Transfer the mixture to a 2-quart baking dish, top with marshmallows, and sprinkle the remaining brown sugar on top.
  • Bake until marshmallows are golden brown, about 10 to 15 minutes in the preheated oven.
