Irresistibly flavorful walnuts with Chinese five spice.
Ingredients:
  • 250g walnut halves
  • 215g (1 cup) caster sugar
  • Peanut oil, to deep-fry
  • 20.00 gm caster sugar, extra
  • 1/2 tsp Chinese Five-Spice
Instructions:
  • Bring a saucepan of water to a boil. Add walnuts and cook for 2 minutes until water boils again, then drain.
  • Move the hot walnuts to a spacious heatproof bowl, then stir in the sugar until the walnuts are evenly coated. Spread the mixture onto a baking tray and let it cool for 30 minutes.
  • Prepare a baking tray by lining it with crumpled paper towel. In a large saucepan or wok, pour enough oil to reach a depth of 5cm. Heat the oil to 190°C over medium-high heat; you'll know it's ready when a cube of bread turns golden brown in 10 seconds. Carefully use a slotted spoon to place one-quarter of the walnuts into the hot oil. Fry for 1-2 minutes or until golden. Transfer the fried walnuts to the prepared tray. Repeat this process in 3 more batches with the remaining walnuts, making sure to reheat the oil between batches. Allow the walnuts to cool on the tray for 5 minutes before using.
  • In a small bowl, mix the extra sugar and Chinese five spice. Pour the sugar mixture over the walnuts in the large bowl. Toss until evenly coated. Allow to cool completely before serving.
