Quick and easy homemade peanut butter cookies using Bisquick® mix.
Ingredients:
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 1 cup creamy peanut butter
  • 2 cups Original Bisquick™ mix
  • 1 teaspoon vanilla
  • 3 tablespoons sugar
  • 48 round chewy caramels in milk chocolate (from 12-oz bag), unwrapped
Instructions:
  • Preheat oven to 375°F. Use an electric mixer on medium speed to combine condensed milk and peanut butter in a large bowl until smooth and well blended.
  • Blend the Bisquick mix and vanilla until fully combined.
  • Roll the dough into 48 (1-inch) balls. Pour the sugar into a small bowl. Gently press the top of each ball into the sugar. Arrange the balls on ungreased cookie sheets, keeping them 2 inches apart.
  • Bake for 7 to 9 minutes until golden brown. Press 1 caramel into the center of each cookie and bake for an additional minute until the chocolate softens. Let them cool for 2 to 3 minutes then transfer to a cooling rack. Let cool completely for about 30 minutes.
