Cannoli Crumb Pie

Italian-inspired crumb pie with ricotta and chocolate chips reminiscent of cannoli - Torta Sbriciolata Ricotta e Cioccolato.
Ingredients:
  • 0.5 cup white sugar
  • 1 packet Lievito Pane Degli Angeli (such as Paneangeli®)
  • 1 packet vanillina (such as Paneangeli®)
  • 0.125 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 1 large egg, beaten
  • 1 (15 ounce) container whole-milk ricotta cheese
  • 0.5 cup mini semisweet chocolate chips
Instructions:
  • Preheat your oven to 350°F (175°C) and generously coat a deep-dish pie plate with nonstick cooking spray.
  • Add flour, sugar, livieto, vanillina, and salt to the food processor. Pulse briefly to mix. Then, gradually pour in the butter and egg while pulsing until a crumbly mixture forms.
  • Spread half of the crumb mixture evenly over the bottom of the pie plate without pressing down.
  • Combine ricotta cheese, sugar, and chocolate chips using a rubber scraper until well mixed. Evenly spread the filling over the base crust. Sprinkle the remaining crumb mixture evenly on top to fully cover the ricotta layer.
  • Place the dish in the preheated oven and bake for 25 minutes. Then switch the oven to broil and bake for an additional 3 minutes until the top is golden brown. Take out of the oven and allow it to cool completely. Chill in the refrigerator until you're ready to serve.
