Quick and delicious cannoli: Use store-bought shells, drain ricotta for better filling, customize with chocolate chips to taste.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon white sugar
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons shortening
  • 1 egg white
  • 0.75 cup red wine
  • 1.5 quarts oil for deep frying
  • 1.5 pounds ricotta cheese
  • 0.5 cup sifted confectioners' sugar
  • 0.75 cup miniature semisweet chocolate chips
  • 3 tablespoons chopped candied orange peel
Instructions:
  • Combine flour, sugar, salt, cinnamon, and nutmeg in a bowl. Mix in shortening and egg white. Slowly incorporate red wine until dough forms a ball. Gently knead the dough, cover, and rest for 30 minutes.
  • Preheat oil in deep-fryer until it reaches 375 degrees F (190 degrees C). Split dough into 2 portions. Roll out each portion on a floured surface to 1/8 inch thickness. Cut into 4-inch long ovals. Wrap each oval lengthwise around a cannoli tube, overlapping the edges, and seal with a touch of egg white.
  • Fry 2-3 cannoli shells at a time in hot oil until golden brown. Drain on paper towels and remove tubes.
  • Combine ricotta cheese and confectioners' sugar in a bowl. Gently mix in vanilla, chocolate chips, and candied orange peel. Chill for 30 minutes. Drain any excess liquid. Fill shells, smoothing edges. Refrigerate until serving.
