Whip up kid-friendly tuna-stuffed pepper boats for a healthy birthday party snack.
Ingredients:
  • 2 small red capsicums
  • 1 x 185g can tuna in spring water, drained
  • 185ml (3/4 cup) bought avocado dip
  • fresh alfalfa sprouts, to serve
Instructions:
  • Begin by slicing the capsicums lengthwise into quarters and removing the seeds and membrane. In a bowl, flake the tuna using a fork, then mix in the avocado dip. Fill each capsicum piece with the tuna mixture and finish by topping with a generous amount of fresh alfalfa sprouts. For a fun presentation, use paper flags and toothpicks as a garnish before serving.
