Indulge in a decadent caramel and banana bread ice cream cake, a stunning dessert made from a simple loaf of banana bread.
Ingredients:
  • 550g loaf banana bread
  • 1L Connoisseur® Classic Vanilla Gourmet Ice Cream, softened
  • Salted caramel topping, to serve
  • Chopped toasted hazelnuts, to serve
  • Dark chocolate curls, to serve
Instructions:
  • Prepare a 19cm x 25cm roasting pan by lining the base and sides with baking paper, leaving a 3cm overhang.
  • Trim 1cm from the top of the banana bread to level using a large serrated knife. Then, slice the remaining banana bread horizontally into 3 even slices. Line a pan and arrange the slices, trimming to fit. Spread Connoisseur® Classic Vanilla Gourmet Ice Cream evenly over the banana bread. Drizzle with caramel topping and use a spoon to gently marble. Freeze for 3 hours or overnight until set.
  • Present the cake on a beautiful platter. Garnish with hazelnut and chocolate curls. Slice into pieces and enjoy promptly.
