Banana bread ice-cream sandwich with candied walnuts

Decadent banana bread and ice cream tower topped with caramel-drizzled candied walnuts.
Ingredients:
  • 375g (2 1/2 cups) self-raising flour
  • 100g (1/2 cup, firmly packed) brown sugar
  • 1.25 gm ground cinnamon
  • 2 eggs
  • 3 large mashed bananas
  • 125ml (1/2 cup) vegetable oil
  • 80ml (1/3 cup) buttermilk
  • Creme fraiche, to serve
  • Sliced banana, to serve
  • 6 large black or very ripe bananas, peeled, sliced, frozen
  • 60ml (1/4 cup) lemon juice
  • 430g (2 cups) caster sugar
  • 40g butter
  • 85g (3/4 cup) walnuts, halved
Instructions:
  • Preheat the oven to 160C/140C fan forced. Grease a 7cm-deep, 11 x 21cm loaf pan with melted butter and line with baking paper.
  • - Sift flour into a bowl, then add sugar and cinnamon. Create a well in the center and add in eggs, mashed banana, oil, and buttermilk. Mix until just combined. Transfer the batter into a prepared pan, smooth the surface, and bake for 1 hour and 20 minutes until a skewer comes out clean. Let it cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
  • In a food processor, blend the frozen banana with lemon juice until smooth like soft serve ice cream, scraping down the sides as needed. Transfer the mixture to a metal container and freeze for 2 hours until it firms up slightly but remains easy to scoop.
  • Prepare a baking tray lined with parchment paper. Melt caster sugar in a saucepan over low heat until golden. Take the saucepan off the heat and mix in the butter until well combined. Add in the walnuts and then use a slotted spoon to place the walnuts onto the lined tray, leaving the caramel in the saucepan for later use.
  • Slice the banana bread into 1cm thick slices and gently toast them. Arrange one slice on each plate. Top each slice with scoops of ice cream, then add another slice of bread. Finish by adding a spoonful of creme fraiche, sliced banana, and walnuts. Warm the caramel sauce on low heat until it's pourable and drizzle it over the sandwiches.
