Caramel and macadamia ice-cream sandwiches

Chill out with this decadent caramel nut ice cream.
Ingredients:
  • 250ml (1 cup) milk
  • 600ml thin cream
  • 6 egg yolks
  • 140g (2/3 cup) caster sugar
  • 2.20 gm vanilla extract
  • 240g (2/3 cup) Nestle Caramel Top'n'Fill
  • 80g (1/2 cup) unsalted macadamia nuts, coarsely chopped
  • 24 wafer biscuits, to serve
Instructions:
  • In a medium saucepan, mix milk and cream together. Heat over medium heat, stirring constantly until warmed (be careful not to boil).
  • Whisk together egg yolks, sugar, and vanilla until the mixture is thick and pale.
  • Combine the milk mixture with the egg mixture, stirring gently. Transfer to a clean saucepan over low heat. Cook and stir with a wooden spoon for 10 minutes until the mixture coats the back of the spoon. Let it cool for 10 minutes before proceeding.
  • Transfer the mixture into a shallow metal container and tightly cover with foil. Freeze for 2-3 hours until nearly solid.
  • Break up the ice-cream with a metal spoon, then use an electric beater to smooth it out. Freeze for 3-4 hours until almost firm.
  • Break the ice cream into chunks. Whisk the caramel until smooth in a bowl. Fold in the macadamia nuts. Swirl the caramel into the ice cream. Freeze for 2-3 hours until firm.
  • Place a scoop of ice-cream on half of the wafers and sandwich with the remaining wafers. Serve the ice-cream sandwiches on serving plates right away.
