Indulge in easy pineapple sundaes with caramel and macadamia toppings.
Ingredients:
  • 1 small pineapple, peeled, cut into 1cm-thick rounds
  • 60g (1/3 cup) coconut sugar
  • Vanilla ice-cream, to serve
  • Caramel sauce, to serve
  • Coconut flakes, toasted, to serve
  • Macadamia nuts, chopped, to serve
  • Small fresh mint leaves, to serve
Instructions:
  • Preheat a sizzling char-grill until hot. Coat pineapple slices with sugar on both sides. Grill until lightly caramelized, about 1-2 minutes per side.
  • Arrange succulent pineapple slices on individual serving plates and top them with a generous scoop of creamy ice-cream, a drizzle of rich caramel sauce, a sprinkle of tropical coconut flakes, a handful of crunchy macadamia nuts, and a garnish of fresh mint leaves. Serve and enjoy this delightful tropical treat.
