Grilled pineapple topped with vanilla ice cream and decadent butterscotch sauce, perfect for any season using canned pineapple.
Ingredients:
  • 6 tablespoons butter
  • 0.25 teaspoon ground nutmeg
  • 2 fresh pineapples - peeled, cored, and cut into 6 spears
  • 0.5 cup butter
  • 1 cup packed brown sugar
  • 0.5 cup heavy whipping cream
  • 1 pinch salt
  • 3 cups vanilla ice cream
Instructions:
  • Get the grill ready by heating it to medium temperature and gently brushing the grate with oil.
  • In a saucepan over medium heat, melt 6 tablespoons of butter with white sugar and nutmeg, stirring until sugar dissolves, for about 5 minutes. Brush pineapple spears with the butter mixture.
  • Place the pineapple on the heated grill and cover it; grill until it's beautifully browned, remember to turn it occasionally, for about 7 to 10 minutes. Move the grilled pineapple to a serving platter.
  • In another saucepan over medium heat, melt the remaining 1/2 cup of butter. Stir in brown sugar and heavy cream until mixture comes to a boil, while stirring constantly. Remove from heat and add vanilla extract and salt. Serve pineapple topped with the cream sauce and ice cream.
