Ingredients:
  • 1 large pineapple, peeled
  • 40.00 ml dark rum
  • 32.00 gm dark brown sugar
  • 10.40 gm shredded coconut
  • 200g plain fat-reduced yoghurt, to serve
Instructions:
  • Fire up the grill on high heat.
  • Quarter the pineapple lengthways and remove the core. Then halve the pineapple pieces lengthways.
  • Arrange the pineapple wedges in a spacious flameproof dish and generously coat them with the rum. Sprinkle with the sugar for added sweetness.
  • Grill the pineapple until the sugar caramelizes and bubbles, about 8 minutes.
  • Toast the coconut in a small frying pan over medium heat, stirring frequently, for 3-4 minutes until lightly golden. Remove from heat.
  • Transfer the pineapple to serving dishes, generously drizzle with the remaining liquid, sprinkle with coconut, and serve promptly with yogurt.
