Banana caramel hotcake delight.
Ingredients:
  • 75.00 gm self-raising flour
  • 16.00 gm brown sugar
  • 128.75 gm skim milk
  • 2 small bananas
Instructions:
  • In a bowl, gently sift flour and add 2 teaspoons of brown sugar. In a separate jug, whisk egg and milk with a fork. Combine with flour mixture until just mixed. Lastly, mash 1 banana and stir into the mixture.
  • Preheat a non-stick frying pan over medium heat and lightly coat with oil spray. Pour 2 tablespoons of batter per hotcake onto the pan, cooking 2 at a time for 2-3 minutes until bubbles form. Flip and cook for another 2 minutes until golden. Transfer to a plate, cover, and keep warm. Repeat with the rest of the batter, spraying the pan between batches.
  • Stir in the remaining 2 teaspoons of brown sugar in the frying pan with 1/2 cup warm water. Let it cook without stirring for 3 minutes until slightly thickened. Add the sliced remaining banana into 12 pieces and cook for 1 more minute until warmed through. Remove from heat and coat the banana in the sauce.
  • Place a delightful duo of hotcakes on each plate, adorn generously with slices of banana, and drizzle the delectable sauce over the top. Present and enjoy the scrumptious creation!
