Caramel banana puff pastries and ice-cream

Indulge in a decadent dessert of caramelized bananas, creamy ice cream, and crispy puff pastry.
Ingredients:
  • 1 sheet (25 x 25cm) frozen puff pastry
  • 1 egg, lightly whisked
  • 125g unsalted butter
  • 100g (1/2 cup, firmly packed) brown sugar
  • 125mls (1/2 cup) thin cream
  • 4 ripe bananas
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat oven to 220°C for a perfectly heated cooking environment.
  • Thaw puff pastry and place on a cutting board. Divide the sheet into quarters, then cut each quarter in half to create 8 triangles.
  • Place on a baking tray and brush with a little egg wash. Bake in the preheated oven for 10 minutes or until puff and turn golden. Remove and cool on the tray.
  • In a small saucepan over medium heat, melt together butter, sugar, and cream until smooth. Add sliced bananas to the caramel sauce and simmer for 2 minutes until bananas are just tender and the sauce is warmed through.
  • To serve, elegantly place a scoop of creamy ice cream on each serving plate, drizzle with caramelized bananas, and adorn each with two golden puff pastry triangles.
