Caramel Chex™ Scotcheroos

Decadent no-bake bars with Chex™ cereal, honey, caramel, peanut butter, and a rich chocolate-butterscotch-peanut butter topping.
Ingredients:
  • 8 cups Corn Chex™ cereal
  • 1 1/2 cups creamy peanut butter
  • 3/4 cup honey
  • 3 tablespoons butter, cut into pieces
  • 1/2 cup caramel sauce
  • 1 package (12 oz) semisweet chocolate chips
  • 1 cup butterscotch chips
Instructions:
  • Prepare a 13x9-inch pan by spraying it with cooking spray. Then, place the cereal in a large bowl and set it aside.
  • In a 3-quart saucepan over medium heat, stir together 1 cup of peanut butter, honey, butter, and caramel sauce until just boiling, making sure to stir constantly.
  • Pour the warm mixture over the cereal in a bowl and mix until everything is well coated. Then, spray the back of a spoon with cooking spray and use it to press the mixture firmly into a pan.
  • In a medium microwave-safe bowl, heat chocolate chips, butterscotch chips, and remaining 1/2 cup of peanut butter uncovered on High for 1 to 2 minutes, stirring every 30 seconds until smooth. Spread over bars and refrigerate for about 2 hours or until set. Cut into 6 rows by 4 rows and store in an airtight container.
