Try this delectable weeknight dish: Caramel chicken thighs cooked in a sweet and tangy sauce on the stovetop.
Ingredients:
  • 0.75 cup dark brown sugar
  • 0.33333334326744 cup rice vinegar
  • 0.33333334326744 cup cold water
  • 0.33333334326744 cup fish sauce
  • 1 tablespoon soy sauce
  • 4 cloves garlic, crushed
  • 1 tablespoon fresh grated ginger
  • 1.5 teaspoons crushed red pepper
  • 1 teaspoon vegetable oil
  • 5 boneless, skinless chicken thighs, quartered
  • 0.5 cup chopped green onions
Instructions:
  • Combine dark brown sugar, rice vinegar, water, fish sauce, soy sauce, garlic, ginger, and crushed red pepper in a bowl and whisk until the sugar is fully dissolved.
  • In a hot skillet, sear the chicken until golden brown, approximately 5 minutes. Pour in 1/2 cup of the brown sugar mixture and continue cooking until the sauce thickens, around 5 more minutes.
  • Add the rest of the sauce and simmer until the juices run clear, about 10-12 minutes. Make sure the internal temperature reaches 165°F (74°C) on an instant-read thermometer. Garnish with green onions before serving.
