Transport your tastebuds with exotic caramel chicken.
Ingredients:
  • 9.20 gm peanut oil
  • 800g chicken thigh fillets, trimmed, thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 21.00 gm soy sauce
  • 53.75 gm caster sugar
  • 48.80 gm fish sauce
  • Steamed jasmine rice, to serve
  • 62.50 ml rice wine vinegar
  • 40.00 gm caster sugar
  • 2 Lebanese cucumbers, cut into thin ribbons
  • 1 green onion, thinly sliced
Instructions:
  • In a saucepan over medium heat, combine vinegar, sugar, and 1/4 cup cold water. Stir and cook for 2 minutes until the sugar dissolves. Transfer the mixture to a heatproof bowl, then add the cucumber, stirring to combine. Let it cool completely before stirring in the onions.
  • In a sizzling wok or frying pan, heat oil over medium-high heat. Saute chicken in batches, stirring occasionally, until beautifully golden. Transfer to a bowl.
  • Sauté onion until softened, then add garlic for fragrance. Return chicken to pan, pour in soy sauce and cook until done. Sprinkle in sugar and let mixture bubble. Stir in fish sauce and juice until sauce thickens. Serve with pickled cucumber and rice.
