Elevate banana bread with caramel macchiato twist and luscious caramel glaze for a sophisticated treat.
Ingredients:
  • cooking spray
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.125 teaspoon salt
  • 2 large very ripe bananas
  • 0.5 cup caramel macchiato flavored liquid coffee creamer (such as International Delight®)
  • 0.66666668653488 cup white sugar
  • 0.5 cup vegetable oil
  • 2 tablespoons instant coffee granules
  • 6 tablespoons unsalted butter
  • 6 tablespoons packed brown sugar
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x5-inch loaf pan with cooking spray.
  • Combine flour, baking soda, baking powder, cinnamon, and salt, whisking until well mixed in a bowl.
  • In a large mixing bowl, mash bananas until almost smooth. Add coffee creamer, sugar, oil, eggs, and instant coffee granules, stirring until coffee granules dissolve. Gradually mix in flour mixture, about 1/2 cup at a time, until batter is smooth. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven for about 1 hour until a toothpick inserted in the center comes out clean. Let it cool in the pan for around 30 minutes before removing.
  • After the bread has cooled, melt butter in a saucepan over medium heat. Stir in brown sugar and vanilla until it boils, ensuring the sugar dissolves. Simmer the syrup for 3 minutes on low heat. Set aside to cool to a warm, liquid consistency before using.
  • Drizzle the glaze over the cooled banana bread and let it set before serving.
