Indulge in a decadent caramel macchiato cheesecake inspired by the classic coffee drink.
Ingredients:
  • 2 cups graham cracker crumbs
  • 0.5 cup butter, melted
  • 2 tablespoons white sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1 (8 ounce) container sour cream
  • 0.25 cup brewed espresso or strong coffee
  • pressurized whipped cream
  • caramel ice cream topping
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease a 9-inch springform pan with nonstick cooking spray.
  • Combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar until fully mixed. Press mixture into the bottom and 1 inch up the sides of the springform pan. Bake for 8 minutes in a preheated oven, then cool on a wire rack.
  • Lower the oven temperature to 325 degrees F (165 degrees C).
  • In a large bowl, use an electric mixer to whip the softened cream cheese until fluffy. Slowly incorporate 1 cup of sugar, mixing until well combined. Add eggs one by one, ensuring each is well blended. Fold in sour cream, espresso, and vanilla. Transfer the batter into the pre-baked and cooled crust.
  • Bake the cheesecake in the preheated oven for 1 hour and 5 minutes. After baking, let it rest for 15 minutes with the oven door partially open. Remove from the oven, run a knife around the edges, and cool on a wire rack until room temperature. Finally, cover with plastic wrap, chill in the refrigerator for 8 hours.
  • Slice the cheesecake into wedges and top each with whipped cream and caramel sauce before serving.
